High-mountain oolong tea is a distinguished representative of lightly fermented, partially fermented teas.
From the central-western part of the country, such as Taichung, Nantou, and Chiayi, after the tea leaves are hand-picked, they undergo a meticulous process of sun withering, indoor withering and stirring, frying, rolling, initial drying, and kneading with heat, before being dried and left to complete the final processing. The leaves are tightly kneaded into a spherical shape, displaying a vibrant emerald green color
